Peach Crisp

ingredients:
4 ripe peaches, washed and halved, with pits removed
4 tablespoons light brown sugar (or just white sugar)
1 cup granola
1 stick of butter cut into 16 pieces
directions:
1. Preheat oven to 400 degrees
2. Lightly coat baking sheet or pan with cooking spray or oil
3. Place 2 tablespoons of granola, 1/2 tablespoon sugar, and 2 pieces of butter in each peach half
4. Arrange prepared peaches in/on baking sheet/pan
5. Bake in over until golden grown and bubbly, approx. 15 minutes
6. Spoon pan juices over peaches and serve
**Optional: Serve with vanilla ice cream
Berry Sauce for Ice Cream

ingredients:
1 bag frozen berries of choice: i.e. raspberries, strawberries, blueberries, etc.
2 tablespoons sugar
Ice cream of choice
**Optional: fresh berries and whipped cream
directions:
1. Thaw berries completely by leaving them at room temp or in the fridge for at least 3 hours
2. Place thawed berries in blender with sugar, and blend until smooth
3. Serve over your ice cream of choice
**4. Add addtional toppings to made sundaes!
Elegant Phyllo Dessert Cups

ingredients:
3 sheets frozen phyllo dough (can be purchased with frozen pastry products)
cooking spray
2 tablespoons white sugar
fillings of your choice: i.e. ice cream, pudding, whipped topping, fruit, etc.
directions:
1. Place frozen phyllo dough in fridge for at least 4 hours to thaw
2. After thawed, unroll phyllo dough
3. Preheat oven to 400 degrees
4. Remove one layer of phyllo dough and place on clean working surface
5. Spray phyllo dough with cooking spray and 1 tablespoon sugar
6. Place another layer of phyllo on top of previous layer
7. Repaeat step 4
8. Repeat step 5
9. Cut prepared phyllo dough into 8 equal rectangles
10. Fit rectangles into a muffin tin to form cups
11. Bake 8-10 minutes or until golden brown
12. Allow cups to cool and fill with your favorite fillings
