Quick Meals

Spinach Quesadillas

ingredients:

8 flour tortillas

1 large bag of frozen chopped spinach

2 cups grated mozzarella cheese (or other preferred cheese)

directions:

1. Defrost spinach in microwave-safe bowl according to package directions

2. Place frying pan over medium heat and coat with oil or cooking spray

3. Place 1/4 of thawed spinach and 1/2 cup grated cheese evenly on top of 4 tortillas

4. Place remaining 4 tortillas on top to make quesadillas, press together if necessary

5. Cook quesadillas on each side until golden brown and cheese begins to melt, approx. 4 minutes per side

6. Cut and serve

 

Fish Tacos

ingredients:

1 box of extra crunchy fish tenders

3 flour tortillas

1 jar tartar sauce or container of sour cream

1.5 cups shredded lettuce

1 red onion thinly sliced

directions:

1. Prepare fish tenders according to oven-baking package directions

2. Wrap flour tortillas in aluminum foil and place in oven for 4 minutes while fish tenders cook

3. To assemble tacos, place two tenders on each tortilla

4. Place a dallop of tartar sauce/sour cream on top of fish tenders

5. Add lettuce and onion to taco as desired, serve

 

Pita Pizza

ingredients:

Pita bread of your choosing

Oil on hand: i.e. olive, vegetable, cooking spray, etc.

Tomato Sauce

Cheese of your choosing: i.e. mozzarella, cheddar, provolone, etc.

Toppings of your choosing: i.e. fresh vegetables, pepperoni, deli meats, etc.

directions:

1. Preheat oven to 400 degrees

2. Place pita bread on baking sheet covered in aluminum foil (to eliminate cleaning!)

**This recipe has been executed without the use of a baking sheet. Simply place assembled pizza directly on oven rack- but use caution and be prepared for some oven mess **

3. Lightly apply oil to pita bread

4. Spread tomato sauce on pita bread as desired

5. Sprinkle cheese over sauce

6. Place chosen toppings on top of cheese

7. Season with salt and pepper

8. Bake in the over 8-10 minutes, or until desired degree of doneness

9.Cut and serve
