Buffalo Chicken Salad

ingredients:
1 package frozen buffalo chicken tenders
lettuce of your choice
blue cheese dressing
**optional: blue cheese crumbles, croutons, sliced red onion, tomato, cucumber, etc.
directions:
1. Prepare buffalo chicken tenders according to package directions
2. Once tenders have cooled, slice into strips or chunks
3. Wash and slice lettuce if not already packaged in this format, place in serving vessel
4. Place prepared tenders on salad
5. Top with dressing
**6. Place all other desired toppings on salad
7. Toss lightly, and serve
Caprese Salad

ingredients:
fresh mozzarella
ripe tomatoes
fresh basil
olive oil
directions:
1. Slice mozzarella and tomatoes into rounds
2. Arrange on platter (similar to above)
3. Slice basil, leaving a few leaves intact for garnish
4. Sprinkle sliced basil on arranged mozzarella and tomatoes
5. Drizzle arrangement with olive oil; season with salt and pepper to taste
6. Place decorative basil leaves on platter, serve
